Welcome to Hitotoki

Hitotoki restaurant places great importance on preparing the most appropriates foods for the season.
We Japanese people are very sensitive to the climate of our seasons, and Hitotoki strives so serve up the distinct tastes of each season.

We cook historical way for best taste for vegetables and so on.
We use the trusted and traditional cooking methods of our region to prepare our vegetables to bring out the most flavor.

Our dishes, packed with nutrients from the land, supports our guests' health and boosts their energy to tackle the day's activities.
For example, in Japan, we believe that summer ingredients have a cooling effect on the body, while winter ingredients help to warm it.

Chef Nojiri (He loves it when we call him "Taisho." Please try it!) has had long career as a chef; even being accredited with a Micheline star. His meals are popular even among our hotel and restaurant staff.

Through traditional Japanese cooking techniques, we enhance the natural “umami” of each ingredient.
We carefully arranged presentations and the use of traditional dishes also provide a visual delight.
